Creamy, cheesy, and oh-so-delicious! This Baked Feta Pasta is a one-pan wonder that’s perfect for busy weeknights.


Ingredients

  • 8 ounces (225g) pasta (penne or rigatoni works best)
  • 1 block (7-8 oz) feta cheese
  • 2 pints cherry tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup fresh basil leaves, chopped

Instructions

  • Preheat your oven to 400°F (200°C).
  • Place the block of feta cheese in the center of a large baking dish. Surround it with cherry tomatoes.
  • Drizzle olive oil evenly over the feta and tomatoes. Sprinkle with oregano, red pepper flakes, salt, and black pepper.
  • Bake in the oven for 30 minutes, or until the tomatoes are blistered and the feta is soft.
  • While the feta and tomatoes are baking, cook the pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
  • Remove the baking dish from the oven. Using a spoon, mash the feta and tomatoes together to create a creamy sauce. Add the minced garlic and stir until combined.
  • Toss the cooked pasta into the dish, mixing well to coat the pasta in the sauce. Add a splash of reserved pasta water if needed to achieve your desired consistency.
  • Garnish with fresh basil and serve immediately.
