- 8 ounces (225g) pasta (penne or rigatoni works best)
- 1 block (7-8 oz) feta cheese
- 2 pints cherry tomatoes
- 3 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- 1/4 cup fresh basil leaves, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Place the block of feta cheese in the center of a large baking dish. Surround it with cherry tomatoes.
- Drizzle olive oil evenly over the feta and tomatoes. Sprinkle with oregano, red pepper flakes, salt, and black pepper.
- Bake in the oven for 30 minutes, or until the tomatoes are blistered and the feta is soft.
- While the feta and tomatoes are baking, cook the pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
- Remove the baking dish from the oven. Using a spoon, mash the feta and tomatoes together to create a creamy sauce. Add the minced garlic and stir until combined.
- Toss the cooked pasta into the dish, mixing well to coat the pasta in the sauce. Add a splash of reserved pasta water if needed to achieve your desired consistency.
- Garnish with fresh basil and serve immediately.
