Cornbread Cowboy Casserole is a two-layered casserole with a seasoned baked bean and ground beef base and a cheesy cornbread topping.

Ingredients

Scale
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 can (15.5 oz) pinto beans, drained and rinsed

  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 box (8.5 oz) Jiffy Cornbread Mix

  4. Prepare cornbread batter: In a separate bowl, mix Jiffy Cornbread Mix with the egg and milk.
  5. Layer the casserole: Spread the beef mixture in the baking dish. Sprinkle cheddar cheese over the beef. Pour cornbread batter on top, spreading evenly.
