Description
Cornbread Cowboy Casserole is a two-layered casserole with a seasoned baked bean and ground beef base and a cheesy cornbread topping.

- 1 lb ground beef
- 1 medium onion, chopped
- 1 can (15.5 oz) pinto beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes, drained
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 box (8.5 oz) Jiffy Cornbread Mix
- 1 egg
- 1/3 cup milk
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
- Cook the beef: In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess grease.
- Add veggies and seasoning: Stir in onion, pinto beans, diced tomatoes, and taco seasoning. Cook for 5 minutes.
- Prepare cornbread batter: In a separate bowl, mix Jiffy Cornbread Mix with the egg and milk.
- Layer the casserole: Spread the beef mixture in the baking dish. Sprinkle cheddar cheese over the beef. Pour cornbread batter on top, spreading evenly.
- Bake: Place in the oven for 25-30 minutes, or until the cornbread is golden brown.
Notes
*You can also use a 9×13 casserole dish.
