This savory soup blends the bold flavors of tacos with the comforting warmth of soup
Ingredients
- 1 pound (450g) ground beef or turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning mix (or homemade taco seasoning)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14 oz) diced tomatoes with green chilies (Rotel is ideal)
- 1 can (8 oz) tomato sauce
- 2 cups beef or chicken broth
- 1 teaspoon chili powder (optional for extra heat)
- Salt and pepper to taste
Instructions
Step 1: Cook the Meat
In a large pot or Dutch oven, brown the ground beef or turkey over medium heat until fully cooked. Drain any excess fat. Add the diced onion and minced garlic, cooking until fragrant and the onion becomes translucent.
Step 2: Add the Seasonings
Sprinkle the taco seasoning over the meat mixture, stirring to coat evenly. If desired, add chili powder for an extra kick.
Step 3: Combine the Ingredients
Pour in the black beans, kidney beans, corn, diced tomatoes, tomato sauce, and broth. Stir everything together, ensuring the ingredients are well mixed.
Step 4: Simmer
Bring the mixture to a boil, then reduce the heat to low. Let the soup simmer uncovered for 20-25 minutes, allowing the flavors to meld together. Stir occasionally.
Step 5: Taste and Adjust
Before serving, taste the soup and adjust the seasoning with salt and pepper as needed.
