Learn how to make a mouthwatering strawberry cheesecake cake recipe that combines rich cream cheese layers with fresh strawberries for the perfect special occasion dessert

Ingredients

  • Graham crackers (about 1½ cups, finely crushed)
  • Unsalted butter (â…“ cup, melted)
  • Granulated sugar (¼ cup)
  • Pinch of salt
  • Full-fat cream cheese (24 ounces, room temperature)
  • Powdered sugar (1 cup)
  • Vanilla extract (1 teaspoon)
  • Heavy whipping cream (½ cup)
  • Large eggs (3)
  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Fresh strawberries for topping

Instructions

  • Prepare the Cheesecake Layer: Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line it with parchment paper.
  • In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream.
  • Pour mixture into prepared pan and bake for 30-35 minutes, until set. Let cool completely, then refrigerate for at least 2 hours.
  • Prepare the Cake Layers: Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  • In a bowl, whisk together flour, baking powder, and salt. In a separate bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
  • Alternate adding dry ingredients and milk to the butter mixture, starting and ending with the flour mixture. Fold in chopped strawberries.
  • Divide batter evenly between the cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cakes cool completely.
  • Make the Frosting: Beat cream cheese and butter together until smooth. Gradually add powdered sugar, then mix in vanilla extract and heavy cream. Beat until fluffy.
  • Assemble the Cake: Place one cake layer on a serving plate. Top with the cheesecake layer, then the second cake layer.
  • Frost the entire cake with cream cheese frosting. Garnish with fresh strawberries if desired. Refrigerate before serving.
